Kale, it seems was the hippest super vegetable out there a couple of years ago. The hub bub has died down a little but it is still an amazingly nutrious addition to any meal. Just a half cup of Raw Kale in a salad will give you over 100% DV of Vitamin A (beta-carotene), 340% Vitmain K,  67% Vitamin C 13% Manganese. Kale is part of that super healthy group of vegetables known as cruciferous which include Broccoli, Cabbage, cauliflower and Brussel Sprouts. This half cup of will only add 17 calories, including 1 gram of fiber making it a very nutrient dense. Some of us like Kale sautéed even better than in a salad!
